Industrial Kitchen Installation: Utilities and Commissioning

A well-prepared project won't deliver the expected result if installation on site is wrong. A millimetre of level difference, the wrong phase, insufficient gas pressure, faulty drainage or an unmeasured airflow can all reduce capacity and safety even if the equipment technically runs.

Pre-installation site-readiness check

  • Are floor, wall and ceiling finishes complete and protected?
  • Are doors, lifts and corridors suitable for moving the largest equipment?
  • Do electrical, gas, water, drainage and duct points match the current drawings?
  • Is the installation sequence for hood, fan and fire elements coordinated?
  • Is temporary storage dry, secure and controlled?
  • Is the floor-loading and lifting plan verified for heavy equipment?
  • Are site-safety and permit arrangements ready for the crews on site?

How is shipping and receiving managed?

Every box or unit is matched against the order list; model, serial number, damage and missing accessories are checked. Any damage should be photographed as packaging is opened and recorded on the delivery document.

The order equipment arrives on site should support the installation sequence — if a large oven or cold-room panel can't later pass through a narrow door, other fixtures may need to be removed first.

Positioning, levels and hygienic finishes

Equipment is placed on approved axes, legs are levelled and, where needed, fixed per manufacturer instructions. Doors, drawers and filters should open fully, and maintenance panels should be reachable.

Wall and counter junctions are finished to be cleanable. Unnecessary gaps trap dirt; fully sealed service points block maintenance — balancing hygiene and access requires careful detailing.

Electrical connections and tests

  • Do voltage, phase, frequency and installed power match the equipment label/data?
  • Are cable size, protection devices, residual-current approach and grounding correct?
  • Are sockets and breakers positioned correctly against water, heat and impact risk?
  • Has motor rotation direction and phase sequence been checked?
  • Is an emergency-stop and lockout/tagout procedure defined?
  • Does cabling obstruct equipment cleaning and maintenance?

Important: electrical connections and measurements should only be performed by licensed, competent technicians, per manufacturer instructions and current technical codes.

Gas, water and drainage connections

The gas line is checked for project compliance, pressure, sealing, valve access, flexible connections and a fuel-cutoff scenario. Gas equipment should not be used before its combustion-air and exhaust system is commissioned.

Water connections are checked for pressure, temperature, quality, backflow protection and filter needs. Drainage is verified for level, air gap or manufacturer detail, trap/venting, leaks and backflow risk. Hoses should not be left loose on the floor.

Hood and ventilation commissioning

  • Fan direction, vibration and mechanical safety check
  • Correct placement of filters, grease collection and cleaning panels
  • Measuring exhaust and fresh-air flow rates
  • Smoke-capture test under cooking load
  • Kitchen-to-dining pressure relationship and door operation
  • Licensed testing of fire suppression and fuel/energy cutoff connections

Function and capacity tests

Turning equipment on is not, by itself, an acceptance test. An oven's temperature recovery, a dishwasher's cycle, a refrigerator's temperature under load, hot-water capacity and hood capture should all be checked under conditions close to real operation.

Test criteria are written in advance. Non-conformances go on an open-items list with a responsible person, date and retest result. A system left on a temporary setting should not be considered handed over.

Training and the handover file

  • Normal operation and safe shutdown
  • Daily cleaning and removable parts
  • Checks to be performed by the user
  • Chemical and consumable selection
  • The first safe step when a fault code or symptom appears
  • Warranty terms and service call channel
  • Technical data sheets, user manual, warranty and serial-number list

Frequently Asked Questions

Does the kitchen company make the equipment connections?

It depends on contract scope. Electrical, gas and fire connections may require licensed expertise. The responsibility matrix should be defined in writing at the start of the project.

Can equipment be used immediately after installation?

Routine production shouldn't begin until manufacturer commissioning requirements, safety tests, infrastructure measurements and user training are complete.

What does an as-built file contain?

Actual equipment locations and connections, the final model/serial list, utility revisions, test reports, operation-maintenance documents and warranty information.

Are installation and commissioning the same thing?

No. Installation is the physical setup of equipment; commissioning is verifying connections, safety, function and performance through measurement.
