GN capacity alone does not indicate actual product volume. Tray depth, the air gap that must be left above the product, and how often trays will be replenished during service should be calculated. Using a tray that is too deep can create a temperature difference between the bottom and top of the product.
A cabinet used for customer self-service does not need the same glass and protection structure as a counter accessed only by staff. Sneeze guard, service opening and product-retrieval direction should be determined according to the business's service model.
The Distinction Between Hot, Cold and Neutral Display
Cold cabinets are aimed at keeping desserts, drinks, sandwiches, meze and similar products within a specific temperature range. Hot display units help maintain the serving temperature of prepared products. Neutral modules are used for displaying packaged or dry products that do not require temperature control.
A hot display cabinet is not a cooking device. Cold products cannot be brought quickly to a safe serving temperature simply by placing them in the display. Similarly, a cold cabinet should not be used to quickly chill a large quantity of room-temperature product.

Positioning the Display Cabinet Within Customer Flow
The angle from which customers will view the cabinet, where staff will access the product, and whether the doors will block the aisle when open should be measured. Reflections that can form on the glass surface can affect product visibility.
The air intake and outlet points of refrigerated units should not be blocked. A cabinet should not be placed directly opposite sunlight, an oven, a grill or hot service equipment. High ambient temperature can increase compressor run time.
Shelf load and GN tray weight should not block air channels. Staff training should include how the glass, shelves, trays and base parts are removed for daily cleaning.
