The dish room is a restaurant's invisible capacity limit. Even if the cooking line is fast, service slows down if dirty plates pile up, clean equipment arrives late, or staff routes collide. A correct design builds an uninterrupted, one-directional, measurable flow from dirty receiving to clean storage.

How is dish room capacity calculated?
Machine selection is based not on total daily plate count but on the busiest turnover window. Seating capacity, table-turn speed, number of plates/glasses used, pot load, service duration and reserve stock are calculated together.
A manufacturer's hourly basket or plate rating may reflect ideal conditions. Staff time for scraping, stacking, loading, unloading and inspection reduces real capacity — the peak-hour scenario should be tested station by station.

How is the dirty-receiving area arranged?

Counter height, cart approach and bin position should reduce repetitive bending and turning. Waste bins should be closed, cleanable and removable on a route that doesn't cross the production area.
How are pre-wash and the machine line set up?
No unnecessary transport should exist between the pre-wash sink and the machine. A professional spray unit, a sink depth that limits splashing, and a basket-waiting area are considered together. As a dirty basket enters the machine, a clean basket should exit the other side.
