Kitchen Hygiene Rules: A Professional Checklist
Kitchen hygiene is not just wiping down surfaces before a shift starts. It requires interlocking daily systems — from supplier receiving to staff behaviour, temperature control, allergens and waste management.

Basic rules for staff hygiene
Training is not just a signature sheet. Staff need to know why, have their behaviour observed on the floor, and have mistakes corrected immediately. Short, task-based, repeated training is more effective.
- Wear clean, task-appropriate protective clothing and hair covering.
- Restrict jewellery, loose personal items and risky behaviour in the food area.
- Wash hands correctly before starting work, after handling raw product, after touching waste, and whenever needed.
- Do not use gloves as a substitute for handwashing; change them between tasks.
- Establish a rule for reporting symptoms such as diarrhoea, vomiting, jaundice, fever or an infected wound to management.
- Cover cuts with a suitable waterproof, visible dressing.
- Apply hygiene rules to visitors and technical service staff too.
Receiving and storage checks
Food safety starts at the door. Supplier, vehicle, packaging, product temperature, use-by date and traceability information are checked on a risk basis. Acceptance, conditional acceptance or rejection decisions for non-conforming products should be defined in advance.
- Move cold and frozen products into proper storage without delay.
- Separate raw animal products from ready-to-eat food.
- Do not keep chemicals or personal items in food storage areas.
- Store products off the floor and away from contamination sources.
- Track opened products with content, opening date and usage plan.
- Apply a first-in/first-use approach based on product risk.
How is cross-contamination prevented?
Raw product, dirty equipment, staff hands, cloths, knives, cutting boards, trolleys and drips can all be sources of cross-contamination. Physical separation is one of the strongest solutions; where not possible, use different timing, colour coding and verified cleaning in between.
Colour coding alone is not enough — staff must know what the colours mean, equipment must not migrate to the wrong station, and it must be stored correctly after cleaning.
How is temperature control managed?
Business-specific limits are set for the cold chain, thawing, cooking, cooling, reheating and hot-holding stages, based on current regulation, product risk and valid scientific evidence.
Having a thermometer is not enough. The measuring point, probe cleaning, device calibration, frequency, responsible person and the action on deviation must all be documented. Measuring only the surface of a product can create false confidence.
Cleaning and disinfection plan
Cleaning removes visible dirt; disinfection then aims to reduce the microbial load to an acceptable level on a properly cleaned surface. Wrong concentration, insufficient contact time, or applying it to a dirty surface weakens the result.

- Who does it: role or responsible person
- When: after use, end of shift, daily/weekly, etc.
- How: disassembly, rinsing, product, dosage, temperature and contact time
- How verified: visual check, test, swab, or record review
- On deviation: re-clean, product assessment and record
Managing allergen and chemical risks
Allergen-containing recipes, supplier labels and service information must work from the same data. Cross-contact can occur through shared oil, a grill, a ladle, a cloth, a glove, a storage container or dusty raw material. Vague phrases like “may not contain” do not replace good process control.
Cleaning chemicals must be labelled, closed and stored separately from food, never decanted into food containers. Dosage instructions, safety data sheets and personal protective equipment should be accessible.
Daily opening and closing checklist
- Are cold storage units and critical product temperatures within range?
- Do handwashing points have water, soap and hygienic drying available?
- Are prep surfaces, knives and boards clean and at the correct station?
- Any signs of pests, leaks, broken parts or foreign material?
- Are chemicals and waste in the correct location?
- Are allergen recipes and label information up to date?
- Is the identity, date and storage decision for leftover product recorded?
- Are equipment shutdown, cleaning and waste-removal steps complete?
