Spidocook Glass-Ceramic Grill and Contact Cooking Systems

On a contact cooking unit, the surface material directly affects how quickly the product absorbs heat, the odour left after cooking, and the cleaning time between shifts. Spidocook is an Italy-based brand focused on professional glass-ceramic cooking systems. Its products are aimed at preparing toast, panini and sandwiches as well as meat, fish, vegetables and eggs through open or top-pressed contact.

The active Spidocook range on Mutfak10 includes the flat-surface contact machines SP-010 P and SP-020 P, the ribbed-top models SP-010 PR and SP-020 PR, and the open glass-ceramic grills SP-200 and SP-300. Spidocook ceramic toaster prices vary according to single or double cooking area, top plate structure, open or lidded body, and total electrical power.

The Cooking Character of the Glass-Ceramic Surface

The glass ceramic used on Spidocook surfaces is non-porous and does not absorb liquid, odour or aroma the way classic porous surfaces do. This makes it easier to clean away residue from a previous product when a vegetable or different item is prepared after toast. The surface should still be cleaned appropriately between product groups to prevent flavour transfer.

Although developed for thermal shock and professional cooking load, glass ceramic is not an unbreakable material. Cast pans, metal containers or heavy kitchen tools should not be dropped onto the surface. A unit showing scratches or cracks should be taken out of service and inspected technically.

The surface's low-stick character does not mean fat should not be used in every recipe. The fat content of meat, cheese, bread and vegetables, along with the targeted browning result, should be evaluated per recipe. Excess fat carries more waste into the collection channel and drawer.

Special Heating Box and Heat Transfer

The Special Heating Box approach used in SpidoGlass systems is aimed at transferring energy from the heating elements to the product through the glass-ceramic surface via contact and infrared radiation. The goal is even heat distribution not just at the centre of the plate but also near the edges.

SpidoGlass Power models can be set up to 400°C in a suitable configuration. High temperature can allow toast and panini as well as raw meat, fish, vegetables or eggs to be cooked directly. Not every product needs to be prepared at maximum temperature; thickness, internal temperature and surface browning should be monitored together.

The Protek.Safe insulation system helps limit heat loss to unnecessary areas inside the body and directs energy toward the cooking surface. The speed and energy advantages stated by the manufacturer apply to specific models and test conditions. Keeping the unit empty at the highest setting all day can increase actual consumption.

Choosing Between the SP-010 and SP-020 Single/Double Plate

The SP-010 P and SP-010 PR are compact contact models with a single cooking area of approximately 250 × 250 mm. They are aimed at preparing one product on order in a small café, kiosk, hotel breakfast or support station. A narrow body saves counter space but limits the number of sandwiches that can be processed at once.

The SP-020 P and SP-020 PR combine two cooking zones of approximately 250 × 250 mm in a single body. Two lids help prepare the same or different products in parallel. Leaving one section idle while the other works should not be assumed to mean the whole body always consumes the same amount of energy; the model's control zones should be checked in the technical documentation.

Choosing a double model should not be based on daily total sandwich count alone. If orders concentrate in a short breakfast or lunch window, two independent surfaces can reduce waiting time. For low volume spread through the day, a single model may be a more balanced investment.

The Difference Between Flat and Ribbed Top Surfaces

P-coded models offer flat top and bottom surfaces. A flat surface makes broad contact with bread and can create a uniform pressed area on toast, quesadilla, eggs and other flat-based products.

PR models have a ribbed top surface and a flat bottom. The ribs create grill marks on the product and can help fat or moisture on the surface move through the channels. A visual line does not indicate that the product has reached its core temperature.

The grooves of a ribbed top surface require more detailed cleaning than a flat plate. Cheese, sauce and carbonised residue should not be left in the grooves. The scraper and cleaning product recommended by the manufacturer should be used.

Self-Balancing Top Plate and Product Thickness

On contact models, the top plate closes over the product and transfers heat from both surfaces at once. A self-balancing top body helps it sit more evenly parallel to sandwiches or products of different thicknesses.

The lid should not be pressed with excessive force. Overpressing can push the bread's filling out, cause cheese to flow into the collection channel, and deviate product height from the recipe.

If products of different thicknesses are prepared under the same plate at the same time, the top surface may sit on the thicker product without making sufficient contact with the thinner one. Products should be grouped by size and recipe.

The SP-200 and SP-300 Open Grills

The SP-200 offers an open, flat glass-ceramic cooking surface of approximately 280 × 440 mm. Without a top lid, the product only receives contact heat from the bottom surface. For burgers, eggs, vegetables, fish or flat-grill processes, the operator turns the product with a spatula.

The SP-300 is aimed at a wider open cooking area. The larger surface can allow multiple products to be prepared across different heat zones; however, the path of raw and cooked products on the same surface must be carefully managed.

An open plate and a contact toaster do not produce the same cycle time. A product not receiving heat from the top must be turned and cooked on each side separately. Product thickness on the menu and operator movement should be factored into the unit-class choice.

Liquid and Residue Collection Drawer

The channel around the cooking surface directs fat, product juice and small residue into a removable drawer. The drawer should be emptied before it fills; in heavy meat or vegetable production, waiting only until the end of the shift is not sufficient.

A drawer containing hot fat should not be removed uncontrolled while the unit is running. Product flow should be stopped, suitable gloves used, and waste emptied according to the business's fat-management procedure.

Having a collection drawer does not mean large residue on the surface should be pushed into the channel. Carbonised pieces should be removed in a controlled way, and the channel outlet should not be blocked.

How Is the Glass-Ceramic Surface Cleaned?

After cooking is finished, the surface should be allowed to cool to the temperature specified by the manufacturer. Pouring cold water on a very hot plate can create thermal stress. Rapid cooling using a hose, pressurised water or ice should not be applied.

The metal scraper supplied with Spidocook models, used at a suitable angle to the surface, helps remove stuck-on residue. A damaged scraper edge can scratch the surface. A standard kitchen knife or wire brush should not be used.

SpidoClean is a cleaning product developed for the glass-ceramic surface and steel body. The chemical should be applied according to the manufacturer's instructions, and the surface should be fully cleaned before food contact. The electrical body should not be exposed to liquid.

How Should a Spidocook Station Be Planned?

Toast, panini, burger, meat and vegetable counts during the busiest service window should be calculated separately. A single or double model is chosen by determining each product's cooking time and the actual count that fits on the same surface.

Raw product preparation, the cooking unit and the service plate should form a single-direction route. Spatulas, tongs and cleaning tools should not be shared between raw and cooked product.

The unit's electrical power, counter load capacity, lid-opening clearance and hood requirement should be confirmed based on the exact model. Even though glass ceramic can produce less smoke, ventilation needs for fatty products do not disappear.

Frequently Asked Questions

What is the difference between the Spidocook SP-010 P and SP-010 PR?

The SP-010 P has a flat top and bottom glass-ceramic surface, while the SP-010 PR has a ribbed top and flat bottom surface. The PR creates grill marks on the product, while the flat model provides a wide, uninterrupted contact area. Capacity classes are similar, but the surface result differs.

Can meat be cooked on a Spidocook glass-ceramic grill?

Models in a suitable temperature class can be used for meat, fish, vegetables and eggs alongside toast. Product thickness, core temperature and separation of raw from cooked product should be checked. Each model's maximum temperature should be confirmed from the technical sheet.

How is a Spidocook ceramic toaster cleaned?

Once the surface reaches a safe temperature, the appropriate scraper supplied with the product and a manufacturer-recommended cleaner such as SpidoClean should be used. Cold water should not be poured on a hot surface, and a wire brush or standard metal knife should not be used.
